Ye I would like to know this as well

Is it more worth it to level a monster to 70 using gold and selling souls
at standard price of 5 for 2ep or

using 10 souls at level 55 straight to 70

You've got it wrong. The Soul of Skills levels up the skill of the monster, not the level. So if you had Demon Down as a skill, it would get levelled up. You must be thinking about the soul of wisdom.

IMO you should sell them. You can fetch around 40 EP for a regular if you look hard enough. 80 for an evolved version, perhaps even more.

Sell it. You can find buyers for SoS 40/80 pretty easily, whereas a demon down stacks costs 7-10 ep
